Ingredients
- 1 large spanish onion, sliced in thin rings
- 12 cups cold water to cover, approximately
- 1 cup granulated sugar
- 1 cup vinegar
- 1 cup water
- 1 tbsp cooking oil

Step 1
Slice peeled onion as thinly as possible. A food slicer makes this a snap to do. Separate into rings and place in bowl. Cover with lots of water. Let stand for 1 hour.
In small saucepan mix sugar, vinegar, water and oil. Heat and stir until sugar dissolves. Drain onions. Pour sugar-vinegar mixture over onions. Let stand in refrigerator, covered, for at least 1 day before serving.
