Ingredients
- ½ pound pork tenderloin or chicken
- ¼ c unsweetened pineapple juice
- ¼ t ground ginger
- ¼ t red pepper
- 1 clove garlic (chopped)
- 1 med onion (chopped)
- 1 small red pepper – strips
- 2 T soy sauce
- 3 c cooked rice
- Soy sauce

Preparation
Step 1
Cut meat into strips and marinate in 1st four ingredients 1-12 hours.
Spray 12” skillet and heat over med-high heat. Stir fry meat until no longer pink. Remove from heat.
Add onion and pepper, stir fry until onion is tender. Stir in meat, soy sauce and rice. Cook about 10 minutes, stirring, until rice is hot and golden. Sprinkle with chives and soy sauce.
