Ingredients
- 2 cups all purpose flour
- 2 cups sugar
- 1 t. Soda
- 1/4 t. Salt
- 2 t. Cinnamon
- 2 & 1/2 cups grated carrots
- 4 eggs
- 3/4 cup crisco oil

Preparation
Step 1
Mix all dry ingredients in bowl. Add carrots. Mix eggs in 1 at a time and beat after each one. Put a little milk in if needed. Mixture should be soupy. Bake in 3-9 inch rounds greased pans. Bake at 350 for 20 minutes.
Topping: 8 oz. cream cheese, 1 stick of butter, 1 box powdered sugar, 2 t. Vanilla. Mix well and frost cake. Cover with chopped pecans.
