Stewed Okra With Creole Chicken

Ingredients
- 1 fryer chicken (about 3 to 3-1/2 lbs.)cut into 8 pieces
- Essence
- 1/2 c. flour
- 1/3 c. olive oil
- 2 lbs. okra, washed, stems removed, sliced into 1/4-inch rounds
- 3 c. julienned onions
- 2 c. chopped celery
- 3 c. chopped tomatoes
- 5 bay leaves
- 2 Tbsp. minced garlic
- 2 c. dry white wine
- 1 tsp. dried thyme leaves
- Pinch cayenne
- Salt and black pepper
- 1/4 c. grated parmesan cheese
- 2 Tbsp. chopped green onion

Preparation
Step 1
Season flour and chicken pieces. Toss chicken in flour. In an oven-proof pan, heat olive oil. Sear chicken 3-4 minutes on each side. Add remaning ingredients to pan. Season with salt and pepper. Cover pan with lid. Bake 1-1/2 to 2 hours, or until slime has disappeared. For the last 15 minutes, remove lid and bake uncovered.
Remove chicken to platter. Spoon okra and tomato mixture over top. Garnish with cheese and green onion.
