Ingredients

  • Pastry for Crust:
  • 1 c. Wondra flour
  • 1/2 tsp. salt
  • 1/3 c. + 1 Tbsp. shortening
  • 2-3 Tbsp. cold water
  • Filling:
  • 6 slices bacon, fried and crumbled
  • 3/4 c. shredded swiss cheese
  • 2 Tbsp. finely chopped green onions
  • 2 eggs
  • 1 c. whipping cream
  • 1/4 tsp. salt
  • Dash of ground red pepper

Preparation

Step 1

Preheat oven to 450 degrees.

For pastry:
Combine flour and salt. Cut in shortening until crumbly. Stir in water and mix until dough forms a ball. Press in bottom and up sides of an 8x8" square baking dish. Prick with a fork and bake 10 minutes. Reduce heat to 325 degrees.

For filling:
Sprinkle crust with bacon, cheese, and onion. Beat eggs with cream, salt and red pepper. Pour over top. Bake 20-25 minutes, or until a knife inserted into the center comes out clean. Let stand 10 minutes before cutting.
