Ingredients
- 1 medium onion
- 1 carrot
- 1 stalk celery
- 3 Tablespoons butter or margarine
- 1 1/2 cups diced raw potato
- 3 cups water
- 1 teaspoon salt
- 1 dash pepper
- 2 knackwurst or 4 frankfurters, cooked
- Chopped parsley

Step 1
Finely diced carrot, onion and celery. Saute slowly in melted butter, stirring often, about 10 minutes. Add potato, water, salt and pepper. Bring to a boi, cover and simmer for 45 minutes. Add sliced meat and heat. Sprinkle with parsley. Serves 2
