Ingredients

  • 1 lb ground beef (or turkey)
  • 1 pkg. taco seasoning
  • 1 (14 1/2 oz.) can whole tomatoes, undrained
  • 1 (8 oz) can whole kernel corn
  • 2/3 c. milk
  • 1 egg
  • 1 pkg. Mexican cornbread mix

Step 1

Brown meat, drain, return to pan. Add taco seasoning, tomatoes and corn. Bring to a boil over medium heat. Pour into casserole dish. Prepare cornbread per instructions on package. Pour over meat mixture. Bake at 350 degrees for 20 to 25 minutes or until browned and bubbly. Cool 10 minutes before serving.Makes a 2-qt. casserole.
