Rigatoni with Sausage and Kale

Ingredients

  • 2 Cup(s) uncooked rigatoni
  • 1/8 tsp table salt
  • 8 oz uncooked turkey sausage
  • 4 cup kale or 1 pkg frozen spinach
  • 1 cup chicken broth
  • 1/4 tsp pepper
  • 1/4 tsp table salt
  • 1/2 cup shredded parmesan cheese, Parmigiano-Reggiano recommended

Preparation

Step 1

Cook rigatoni in salted water according to package directions.

Meanwhile, remove sauage and cook in a large skillet over medium heat. Break up the sausage as it cooks. Add kale or spinach and cook while stirring constantly. About 3-5 minutes.

Add broth to the skillet and scrape up the browned bit from the bottom. Season with salt and pepper. Cover skillet and reduce heat to low. Cook another 5-10 minutes until kale is limp or spinach or cooked. Stir in the rigatoni noodles. Cover and heat through.

Sprinkle each serving with about 2 tbsp of cheese before serving.

Yields about 1 1/2 cups per serving.
