  • 1 c packed light brown sugar
  • 1/4 c cornstarch
  • 1/4 t salt
  • 4 c half-and-half or light cream
  • 5 egg yolks, slightly beaten
  • 1/4 c butter, sliced
  • 2 t vanilla

Preparation

Step 1

In a medium saucepan combine brown sugar, cornstarch, and salt. Whisk in the half-and-half.

Cook over medium heat until mixture is thickened and bubbly, whisking constantly. Cook and stir for 2 minutes more. Remove from heat. Gradually whisk about 1 c of the hot mixture into egg yolks. Add egg yolk mixture to mixture in saucepan. Bring to a gentle boil' reduce heat. Cook and whisk constantly for 2 minutes more. Remove from heat. Whisk in butter and vanilla until combined. Pour pudding into a large bowl. Cover surface of pudding with plastic wrap. Chill for 4 to 5 hours or until well chilled. If desired, garnish individual servings with your choice of topper.
