Sweet & Sour Pork (or Chicken)

Ingredients
- 2 1/2 lbs pork chops, cut up or
- 2 1/2 to 3 lbs chicken fryer, cut up
- 3 Tbls. Margarine
- 2 Tbls. Water
- 1 egg
- 1 c. Bisquick
- 1/3 c. brown sugar
- 2 Tbls. Cornstarch
- 1 c. pineapple chunks
- 1 2/3 c. water
- 3 Tbls. Vinegar
- 3 Tbls. Catsup
- 2 Tbls. Soy sauce
- 1 medium green pepper, cut into 1 inch pieces
- 1 small onion, thinly sliced
- hot cooked rice

Step 1
Heat oven to 400º.
Remove skin & bones from chicken & cut into bite-sized pieces, or cut thick pork chops into bite-sized pieces. Melt margarine in a 9 X 13" glass baking dish in heated oven. In a medium bowl, combine 2 Tbls. Water & egg, & beat slightly. Dip meat pieces into egg mixture, then coat with Bisquick. Place meat in pan, spreading evenly over bottom. Bake, uncovered for 25 to 30 mins. Turn pieces & bake 10 min. longer until done.
In a medium saucepan, mix brown sugar, sugar & cornstarch. Stir in 1 ⅔ c. of water, vinegar & soy sauce. Cook over medium heat, stirring until mixture boils & thickens. Stir in pineapple chunks, green pepper & onion. Lower heat, cover & simmer 5 to 7 min.. Stir in cooked chicken & serve over rice.
