Ingredients
- 4 c. frozen, fresh or canned corn
- 2 (14.75 oz.) cans Hill Country Fare Cream Corn
- 1/2 c. green onion, chopped
- 1/2 c. cilantro, chopped
- 1 clove garlic, chopped
- 1/2 (4 oz.) jar H-E-B Diced Pimentos
- 1 (4 oz.) jar H-E-B Diced Green Chiles
- 2 eggs, beaten
- 2 c. shredded Mexican Blend Cheese
- 1 tsp. cumin
- 1 half pint heavy cream
- salt and pepper, to taste
- 2 c. crushed tortilla chips

Preparation
Step 1
Preheat oven to 350°F.
In a large bowl, combine all ingredients but the chips. Mix well.
Pour mixture into 9x13-inch baking dish and top with crushed tortilla chips. Cover with lid or aluminum foil.
Bake for 1hour and 20 minutes. Then remove from oven and let casserole rest 15 minutes before serving.
