Ingredients

  • Cake:
  • 1 18.25 oz white cake mix
  • 3 egg whites
  • 1 10 oz can frozen margarita mix (thawed)
  • 2 tbs vegetable oil
  • 1 tbs grated lime peel
  • 1 tbs lime juice
  • Frosting:
  • 1 8 oz pkg cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp lemon extract
  • 1 tbs lime juice
  • 5 cups powdered sugar

Step 1

Preheat oven to 350 degrees. Spray a baking pan (bundt, 9x13, or 2 8-inch rounds for layered cake) with flour spray.

In a large mixing bowl, beat together cake mix, egg whites, margarita mix, vegetable oil, lime zest, and lime juice. Beat on low until moistened, then on medium for 2 minutes. Pour batter into prepared pan and bake according to directions for specific pan. Toothpick will show moist crumbs. Cool in pan on a wire rack for 15 minutes before inverting onto the rack.

For frosting, in a large mixing bowl, beat cream cheese and butter together until light and fluffy. Beat in lemon extract and lime juice. Beat in powdered sugar one cup at a time, scraping sides after each addition. Cool cake completely before frosting.

NOTE: For a special kick, add 3 shots of rum or tequila to the frosting!!
