Sometimes referred to as Wacky Cake or Depression Cake, this cake is known as the one-pot cake where it’s mixed together in a pan, using wells in the dry mix for the wet ingredients. It’s “crazy” because there are no eggs, milk, or butter & doesn’t use a bowl. I found that mixing it in the pan itself was cumbersome, because it’s shallow & part of my cake stuck to the pan because the oil sprayed in the pan gets mixed up in the batter. I prefer to mix the ingredients in a bowl. You can click on the link if you want follow the process to mix the cake directly in the pan.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons cocoa (unsweetened)
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon white vinegar
  • 1 teaspoon pure vanilla extract
  • 5 tablespoon vegetable oil
  • 1 cup water

Preparation

Step 1

Preheat oven to 350 degrees F.

Mix first 5 dry ingredients in a greased 8" square baking pan. Make 3 depressions in dry ingredients - two small, one larger. Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression. Pour water over all. Mix well until smooth.

Bake on middle rack of oven for 35 minutes. Check with toothpick to make sure it comes out clean. Cool. Top with your favorite frosting. Enjoy!

Note: Oven cooking times may vary, be sure to check your cake to make sure you do not over bake.

You can double this recipe, just use a 9x13 baking pan.
