Ingredients
- 2 ½ C. sugar
- ½ C. Karo
- ½ C. water
- pinch salt
- 2 egg whites
- 1 tea vanilla
- 1 C. pecans
- ●Separate egg whites from yolks saving egg whites.
- ●In a heavy sauce pan, combine sugar, salt, water, and Karo being careful to keep sugar off sides of pan. Cook over low heat until sugar dissolves.
- ●Cover and cook over medium heat 2 to 3 min. to wash down sugar crystals from sides of pan.
- ●Uncover and cook syrup until a hard ball stage (260 F.). Remove from heat.
- ●Beat egg whites until stiff.
- ●Pour syrup in a small steady stream over egg whites, beating continuously. Beat until mixture holds shape.
- ●Stir in vanilla and pecans.
- ●Drop by spoonful onto buttered pan.
