Ingredients

  • 1 can pineapple juice - 6 oz
  • 1/4 C chili garlic sauce
  • 3 TBS rice vinegar
  • 3 TBS soy sauce
  • 3 TBS brown sugar
  • 2 TBS dry sherry
  • 2 TBS cornstarch
  • 1 lb pork tenderloin cut into 2" chunks
  • S & P
  • 3 TBS canola oil - divided
  • 1 TSP minced ginger
  • 1 TSP minced garlic
  • 2 red bell peppers cut into 1/4" strips
  • 2 C snow peas
  • 1 C thinly sliced carrots
  • 1 bunch scallions sliced on bias
  • 1 C cubed fresh pinapple

Preparation

Step 1

Whisk together in a bowl 1st group of ingredients. Set aside.

Sear pork in 2 TBS oil in wok or large non-stick skillet until browned, 5 min. Transfer pork to paper-lined plate. Wipe out wok.

Stir-fry ginger and garlic in 1 TBS oil over med-high heat about 30 sec. Add bell peppers and carrots, stir-fry 2-3 min. Add snow peas and scallion whites, stir-fry 1-2 minutes.

Add pinapple and reserved sauce mixture, simmer to thicken - about 2 minutes. Stir in reserved pork and simmer until heated through, about 2 min. Serve
