Ingredients
- 1 can pineapple juice - 6 oz
- 1/4 C chili garlic sauce
- 3 TBS rice vinegar
- 3 TBS soy sauce
- 3 TBS brown sugar
- 2 TBS dry sherry
- 2 TBS cornstarch
- 1 lb pork tenderloin cut into 2" chunks
- S & P
- 3 TBS canola oil - divided
- 1 TSP minced ginger
- 1 TSP minced garlic
- 2 red bell peppers cut into 1/4" strips
- 2 C snow peas
- 1 C thinly sliced carrots
- 1 bunch scallions sliced on bias
- 1 C cubed fresh pinapple

Preparation
Step 1
Whisk together in a bowl 1st group of ingredients. Set aside.
Sear pork in 2 TBS oil in wok or large non-stick skillet until browned, 5 min. Transfer pork to paper-lined plate. Wipe out wok.
Stir-fry ginger and garlic in 1 TBS oil over med-high heat about 30 sec. Add bell peppers and carrots, stir-fry 2-3 min. Add snow peas and scallion whites, stir-fry 1-2 minutes.
Add pinapple and reserved sauce mixture, simmer to thicken - about 2 minutes. Stir in reserved pork and simmer until heated through, about 2 min. Serve
