Ingredients

  • 1 lb dried kidney beans
  • 2 qts water
  • 2 c. chopped onions
  • 4 cloves garlic, minced
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 3/4 c. tomato paste
  • 1 c. tomato sauce

Preparation

Step 1

Soak beans in 2 quarts of water overnight. Drain and add new water. Bring to a boil. Simmer just until tender, about 40 minutes. Meanwhile sauté onions, add garlic last 30 seconds. When golden add remaining ingredients and simmer 15 minutes. Drain the beans, reserving liquid. Add beams to tomato mixture with 2 cups reserved liquid. Cover and simmer one hour.
