Ingredients

  • 32 3/4 inch thick slices baguette style bread
  • 6 T olive oil
  • 1 cup pimiento stuffed spanish olives, sliced
  • 1/2 cup greek pitted olives, chopped
  • 1/2 cup dried tart cherries, snipped
  • green onions
  • 1 T fresh basil
  • 1 tsp finely shredded lime peel
  • 2 tsp lime juice
  • 6 oz goat cheese
  • 2 oz very thinly sliced proscuitto, cut into 32 pieces
  • 2 T snipped fresh chives

Preparation

Step 1

Preheat oven to 425 degrees. Place baguette slcies on very large baking sheet. Brush slices with 4 T of oil and season lightly with salt and pepper. Place on middle oven rack and bake about 5 minutes or until crisp and light brown, turning once. Remove from oven; set aside.

For olive-cherry tapenade, in a medium bowl stir together remaining 2 T olive oil, olives, cherries, onion, basil, lime peel, and lime juice.

To assemble, spread goat cheese on toasted bread slices. Top with proscuitto pieces and olive cherry tapenade. Sprinkle with chives.
