Ingredients
- 1 1/2 cups whole wheat flour
- 3/4 cup ground flaxseed
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 8 ounces canned unsweetened pumpkin
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsweetened applesauce
- 1 egg
- 1 egg white
- 1/2 cup fat-free milk
- 1/2 cup dried cranberries
Preparation
Step 1
Preheat the oven to 350 degrees. Coat a 9-by-5-inch loaf pan with cooking spray.
Mix the flour, flaxseed, baking soda, baking powder, salt, and spices in a large bowl. Whisk the pumpkin, sugars, applesauce, eggs, and milk in a medium bowl. Pour over the dry ingredients and gently stir together. Fold in the cranberries. Pour into the loaf pan.
Bake about 40 minutes, until a toothpick inserted in the center comes out clean. Let stand on a wire rack for 15 minutes. Turn out of the pan and cool completely.
