Ingredients
- 4 carrots, sliced and cooked
- 1 cup milk
- 1/4 cup butter, melted
- 3 eggs, beaten
- 1/4 cup honey
- 2 tbsp whole wheat flour
- 1 tbsp baking powder
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp toasted wheat germ

Step 1
Preheat oven to 350 F. Butter a 1-quart ovenproof casserole.
In a food processor or blender, process the carrots and milk until smooth. Add the butter.
In a large bowl, mix the remaining ingredients. Combine with the carrot mixture. Pour into the casserole. Sprinkle wheat germ over the top.
Bake until the mixture is puffed and lightly browned, about 30 minutes.
