Ingredients

  • 1 package (375 g) farfalle (bow tie) pasta (about 6 cups uncooked)
  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts cut into 1-inch cubes
  • Salt and freshly ground pepper to taste
  • 1 clove garlic, minced
  • 1/3 cup white wine
  • 1 can (28-oz) ground or crushed tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup thinly sliced pickled hot pepper rings
  • 2 teaspoons dried basil
  • 1/2 cup grated Parmesan cheese

Preparation

Step 1

Bring large pot of salted water to a boil.
Add farfalle and cook until al dente about 12 minutes, drain.

Meanwhile, heat oil in a large skillet on medium heat.
Add chicken to skillet and season with salt and pepper.
Add garlic and sauté for 1 minute.
Add wine, tomatoes, tomato paste and pickled peppers.
Bring to a boil, reduce heat and simmer for 5 to 7 minutes or until chicken is no longer pink.

Add cooked pasta to skillet.
Toss everything together and sprinkle with basil.
Serve with Parmesan.
