Fried Rice and Tofu

Ingredients
- 4 tbsp oil
- 2 eggs, beaten
- 1/2 pound firm tofu, drained and cubed
- 1 cup sliced mushrooms
- 1 stalk celery, chopped
- 1/2 cup alfalfa sprouts
- 2 scallions, chopped
- 4 cups cooked brown rice
- 1 cup peas
- 3 tbsp soy sauce
- Pinch of white pepper

Preparation
Step 1
In a wok or large skillet, heat 2 tbsp oil until hot. Reduce heat to medium; add eggs and tofu. Stir lightly until eggs are almost set; remove from pan and set aside.
In the same pan, heat the remaining oil. Add the mushrooms, celery, sprouts, and scallions; stir-fry about 2 minutes. Add the rice; fry 3 to 5 minutes; continue stirring and add the peas and egg mixture. Gradually add the soy sauce and pepper.
Fried Rice and Tofu is tasty when served immediately or made in advance and reheated.
