Baked Apples in Orange Sauce

Ingredients
- 6 medium-size baking apples
- 1/3 cup minced raisins
- 1/3 cup finely chopped almonds
- 1/2 cup maple syrup
- 1/2 cup orange juice
- 3 tbsp butter
- 2 tsp grated orange rind
- 1/2 tsp ground nutmeg
- 2 cups yogurt

Step 1
Preheat oven to 375 F. Core apples to within 1/2 inch of bottoms.
Combine raisins and almonds; spoon the mixture into the apple centers.
Set the apples in a shallow baking dish that is just large enough to accommodate them and 1 cup of liquid.
In a small saucepan, heat the syrup, juice, and butter. When the butter has melted, add the orange rind and nutmeg, stirring until blended. Pour this mixture over and around the apples.
Bake, basting often, until apples are tender, about 40 minutes.
Serve the warm apples in bowls. Top each with yogurt and drizzle with the sauce that has accumulated in the baking pan.
