FMD Makeover: Creamy tuna salad | Haylie Pomroy
On Phase 3 of The Fast Metabolism Diet, you can make a traditional tuna salad using safflower mayonnaise
but even on Phase 1, you can make a home-style tuna salad by getting creative.
A reader actually came to use with the suggestion of using white beans to make a creamy sauce. We ran with that idea and tweaked the recipe with fresh herbs and lemon. The result? A quick, family-friendly tuna salad for Phase 1 or Phase 3 dinner (remember to add a healthy fat, like avocado, for Phase 3).
Blend the beans, garlic, lemon juice, and salt in a food processor until smooth. Stir together the bean mixture, tuna, and herbs. Season to taste with additional sea salt and pepper, if you like, and serve.
If you are using the larger 1 1/2 portions, this recipe will make two portions instead of three.
