Ingredients

  • 6 eggs (beaten)
  • 1/2 pound butter (1 cup)
  • 1 cup white sugar
  • 2 lemons (juice and rind)

Step 1

Melt butter in double boiler. Add sugar to beaten eggs (wire whip works well). Stir egg and sugar into butter. Add lemon juice and rind. Cook and stir until thickened (about 5 minutes).

Pour into jars and seal. Store in refrigerator.

Makes 1 3/4 pints.
