  • 1 lb green beans
  • 1 tbsp olive oil
  • 1 shallot, minced
  • 1/4 cup apricot nectar
  • 1/3 cup gluten-free apricot preserves
  • 2 tsp fresh chopped rosemary leaves
  • 1/4 tsp salt
  • Pinch white pepper

Step 1

1. Cook beans in a steamer until crisp-tender, about 4-5 minutes. Drain and set aside.

2. In large saucepan, heat olive oil over medium heat. Add shallot; cook and stir until crisp-tender, about 4 minutes.

3. Add apricot nectar and beans; bring to a simmer. Cover pan and simmer 3-4 minutes, until beans are tender. Uncover and add preserves, rosemary, salt and pepper. Cook and stir 1-2 minutes, until beans are glazed.
