Ingredients
- new potatoes
- olive oil
- kosher salt
- black pepper
- rosemary (or other dry herbs)

Preparation
Step 1
Bring a pot of salted water to a boil. Boil potatoes until fork tender.
Generously drizzle a sheet pan with olive oil. Place potatoes on the cookie sheet with plenty of space between for smashing.
With a potato masher, press down each potato until it slightly mashes, rotate the potato masher and repeat.
Brush the tops of the potatoes with olive oil. Salt, pepper and season with herbs to taste.
Bake at 450 degrees for 20-25 minutes until golden brown and crispy.
