  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 cup bran
  • 1/2 cup wheat germ
  • 1/3 cup nonfat dry milk
  • 1 cup yogurt
  • 1/4 cup orange juice
  • 1 tbsp grated orange rind
  • 2 eggs, beaten
  • 1/3 cup maple syrup
  • 1/4 cup safflower oil
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Step 1

Preheat oven to 400 F. Oil enough cups in muffin tins for 15 muffins or line cups with paper baking cups.

In a large bowl, mix flour, baking powder, bran, wheat germ, and nonfat dry milk.

In a medium-size bowl, combine yogurt, orange juice, orange rind, eggs, maple syrup, and oil. Add to flour mixture; stir just enough to moisten dry ingredients. Stir in raisins and walnuts.

Divide batter evenly among the muffin cups. Bake until lightly browned, 15 to 20 minutes. Serve warm with Apple Butter (recipe in collection).
