In a small saucepan, combine berries and honey. Cook over low heat, stirring constantly, until just below boiling. Remove from heat.
In a small bowl, mix cornstarch and water until smooth; add to the berry-honey mixture. Stirring constantly, cook over low heat until thick and smooth, 5 to 7 minutes.
Strain sauce through a coarse siever; cool. Place in a container, cover, and store in the refrigerator.
This sauce makes a delicious topping for yogurt, cheesecake, pancakes, and dessert crepes.
