  • 3/4 cup milk
  • 2 eggs, beaten
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups cooked brown rice
  • 1/2 cup wheat germ
  • 1/2 cup raisins or chopped dried apricots

Step 1

Preheat oven to 350 F. Oil a 1 1/2-quart baking dish that has a cover.

In a large bowl, mix the milk, eggs, honey, and vanilla. Add the rice, wheat germ, and raisins or apricots; mix again. Pour into the baking dish; bake until set, 45 to 50 minutes.

Serve hot or chilled, and garnish with Apricot-Orange Sauce (recipe in collection), if desired.
