Ingredients

  • 4 tbsp peanut oil
  • 2 large eggs
  • 1/4 cup chopped scallions
  • 1/2 cup carrots, diced/shredded
  • 3 garlic cloves
  • 2 cups leftover white rice
  • 1/4 cup black bean sauce
  • 1/4 cups reduced-sodium chicken broth, optional
  • 1 cup diced cooked pork
  • Salt and ground black pepper

Preparation

Step 1

Heat 2 tsp of oil in large skillet
Add eggs and cook 2-3 minutes, until scrambled
Remove eggs and set aside
In same skillet, add remaining 2 tsp oil
Add scallions, carrots, and garlic, 2 minutes
Add rice and pork, 1 minute, stir constantly
Add black bean sauce and add chicken stock if its thick
Reduce heat to low, cover and simmer 5 minutes
Season with salt and pepper
Stir in cooked egg before serving
