Ingredients
- 3 medium-size carrots, grated
- 1 cup chopped pineapple
- 1 medium-size orange, cubed
- 1/2 cup raisins
- 1/2 cup chopped pecans
- 1/4 cup grated unsweetened coconut
- 4 tbsp yogurt
- Pinch of celery seed
- Lettuce or spinach leaves

Preparation
Step 1
In a medium-size bowl, toss the carrots, pineapple, orange, raisins, pecans, and coconut.
In a small bowl, mix the yogurt and celery seed. Gently stir into the carrot-and-fruit mixture. Chill 1 to 2 hours.
To serve, place mounds of the mixture on lettuce or spinach leaves.
