Ingredients

  • 6 cups cubed fruits (pineapple, strawberries, melon, apples, oranges, peaches, seedless grapes, blueberries, raspberries)
  • 1/2 cup shredded fresh coconut
  • 1/4 cup raisins
  • 1 egg
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 2 tbsp orange juice
  • 1/2 cup yogurt
  • 2 tsp grated orange rind
  • 1 tsp poppy seeds

Preparation

Step 1

In a large bowl, toss the fruit, coconut, and raisins. Refrigerate.

To make the dressing: Lightly beat the egg in a small saucepan. Stir in the lemon juice, honey, and orange juice. Cook over low heat, stirring constantly, until mixture coats the back of a spoon. Cool thoroughly.

Fold in the yogurt, orange rind, and poppy seeds. Chill.

Pour the dressing over individual servings of the fruit.
