Ingredients

  • Crust:
  • 1/2 cup honey
  • 1 cup butter
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 3/4 cups whole wheat flour
  • 1/4 cup soy flour
  • Filling:
  • 1 (15 ounce) can unsweetened crushed pineapple, with juice
  • 1/2 cup honey
  • 2 egg yolks
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 tbsp fresh lemon juice
  • 2 tsp ground lemon rind

Step 1

Crust: Cream honey, butter, vanilla and salt. Whisk together flours and add all at once to butter mixture; mix until crumbly. Pat two-thirds of the mixture into the bottom of ungreased 11-by-7-inch baking pan. Set aside.

Filling: Combine pineapple, honey, egg yolks, cornstarch and salt in saucepan. Cook over medium heat, stirring constantly, for 5 minutes. Turn heat to low and continue cooking and stirring until mixture is thick and clear. Add lemon juice and rind. Spoon mixture onto the crumb combination in baking pan. Sprinkle the remainder of the crumb mixture over the top. Bake at 325 F for 50 minutes or until golden brown. Cool slightly before cutting into squares.
