Ingredients
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can chick peas or cannellini beans, drained
- 1 can diced tomatoes – with liquid
- 3 cloves garlic minced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 onion, diced
- 1 carrot diced
- 4 T Olive oil
- 1 can vegetable broth
- 3 T chili powder
- S&P to taste
- 1/2 t. cayenne
- 1/2 t. chili flakes
- 1/2 t. cumin
- 1/2 bunch fresh cilantro, finely chopped

Preparation
Step 1
In large pot sauté pepper, onion, carrot and garlic in Olive oil until soft. Add spices and sauté until fragrant. Add tomatoes and veg broth. Bring to a boil and simmer for 15 minutes. Add drained beans and simmer for 20-30 minutes on low. Finish with chopped cilantro.
Top with favorite chili toppings like sour cream, green onion, cheddar or tortilla chips.
