Ingredients
- 1/2 cup cracked wheat
- 2 1/2 cups buttermilk
- 1/4 cup honey
- 2 tbsp molasses
- 1/2 cup rye flour
- 3 cups whole wheat flour
- 2 tsp baking soda

Step 1
Soak the cracked wheat in the buttermilk overnight.
Preheat oven to 300 F. Oil a 9-by-5-inch loaf pan.
Add the honey and molasses to the cracked wheat-buttermilk mixture; stir well.
In a separate large bowl, combine the rye flour, whole wheat flour, and baking soda. Add to the moist ingredients; mix well.
Pour into the loaf pan. Bake 1 1/2 hours. Serve warm with Safflower Butter (recipe in collection).
