Ingredients
- 1 1/4 cups whole, raw almonds
- 1 1/4 cups honey
- 1/4 cup carob powder
- 1 tbsp water
- 1/4 cup butter
- 2 tsp baking powder
- 1 tsp vanilla

Coarsely chop almonds; spread in baking pan and roast at 300 F for 15 minutes or until lightly browned. Set aside. Mix honey, carob powder, water and butter in heavy saucepan. Bring to a boil, stirring constantly, and continue cooking until syrup reaches 280 F on candy thermometer (it's ready if, when dropped into cold water, the syrup separates into hard and brittle threads). Remove roasted almonds to a bowl and lightly oil the baking pan. Remove syrup from heat and quickly stir in baking powder, vanilla and almonds. Pour mixture into baking pan and spread thinly. When cool, break into pieces.
