Ingredients

  • 2 1/4 cups whole wheat flour
  • 1/4 cup soy flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp nutmeg
  • 4 eggs
  • 1 cup honey
  • 1 cup oil
  • 2 1/2 cups grated carrots
  • 1 cup raisins
  • 1 cup chopped nuts

Step 1

Combine flours, baking powder, salt, cinnamon and nutmeg. Beat eggs with honey and oil; add to dry ingredients. Stir in carrots, raisins and nuts. Pour into well-oiled 9-inch tube pan. Bake at 350 F for 1 hour and 10 minutes or until top springs back when lightly pressed with fingertip. Remove from oven and cool on wire rack 10 minutes. Loosen sides with metal spatula and remove from pan. Cool and frost.
