Ingredients
- 1 1/2 cups whole wheat flour
- 1 tsp salt
- 3 tsp baking powder
- 1 1/2 cups bran
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 eggs
- 1/4 cup oil
- 1/4 cup blackstrap molasses
- 1/3 cup honey
- 1 1/2 cups milk
- 2 tbsp vinegar
- 2 tsp grated orange rind
- 1 cup grated carrots
- 1/2 cup raisins

Step 1
Combine dry ingredients in large bowl. Set aside. Beat eggs; add oil, molasses, honey, milk, vinegar, orange rind and carrots. Add carrot mixture and raisins to dry ingredients; mix until dry ingredients are just moistened. Fill oiled muffin tins 2/3 full. Bake at 375 F for 20 minutes.
