Ingredients

  • 3 eggs
  • 3/4 cup oil
  • 1 1/2 cups honey
  • 3 cups grated zucchini
  • 3 tsp vanilla
  • 1 tsp almond extract
  • 2 3/4 cups whole wheat flour
  • 1/4 cup soy flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 to 1 cup rolled oats (quantity varies according to moisture content of zucchini)
  • 1 cup chopped nuts

Step 1

Beat eggs until light and fluffy; add oil, honey, zucchini, vanilla and almond extract. Mix well. Combine flours, baking powder, salt and spices; add to zucchini mixture. Stir in oats and nuts. Pour batter into 2 greased and floured 5-by-9-inch loaf pans. Bake at 325 F for approximately 1 hour. Will freeze nicely.
