- 6 tablespoons cream of tartar
- 3 tablespoons baking soda
- 1 teaspoon cornstarch or potato-starch flour

Combine all ingredients in a sifter. Sift into a small bowl; stir with wire whisk until blended. Decant into a small glass jar with screw-top lid. Store in a cool, dry place for up to 2 months.

Homemade Baking Powder
When you use this homemade powder, you must be sure to get the batter or dough into the oven as soon as possible. It's not a double-acting powder like many of the commercial ones, so it only releases CO2, when combined with liquid, not when the batter is heated. Gluten-free breads are more fragile structures, so they can't hold on to the leavening. Also, try to add this at the last minute, before the batter goes into the oven.
