Ingredients
- 1 whole salmon - butterflied
- 2 tbsp butter, softened
- juice of one lemon
- 2 tsps dry mustard
- 2/3 to 1 cup brown sugar

Step 1
TO BUTTERFLY SALMON
Remove head, tail and fins. Run sharp knife down backbone until salmon opens flat. Place skin side down on sheet of foil. Spread butter over fish. Sprinkle liberally with lemon juice and mustard. Cover with 1/2 to 1/2" of brown sugar.
TO COOK: Place on bar-b-que, lower lid and cook over low heat for 20 to 30 minutes. Salmon is cooked when flesh flakes. (don't overcook).
