Cherry Tomato and Asparagus Salad 0 Picture

Ingredients

  • 1 lb. asparagus trimmed and halved
  • 6 cups cherry, pear, grape tomatoes
  • in varied colors halved
  • Optional. 1/2 cup crumbled gorgonzola
  • 1 ripe avocado cubes
  • 1 cup sliced basil leaves
  • 1/4 c olive oil
  • 2 tsp lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp salt and pepper

Preparation

Step 1

Boil asparagus for 2 min and rinse cold
water w ice cubes
Mix asparagus w remaining ingredients. In lg bowl
Coat evenly w dressing
