Ingredients

  • 4 medium beets
  • 3 eggs
  • 3/4 cup honey
  • 1 cup oil
  • 1/2 cup carob powder
  • 1 1/2 cups whole wheat flour
  • 1/4 cup soy flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla

Step 1

Steam beets until tender; peel, quarter and place in blender. Add eggs, honey and oil; blend until beets are pureed. Whisk together carob powder, flours, baking powder and salt. Add blender ingredients and vanilla. Pour into greased, floured 9-inch tube pan. Bake at 350 F for 50 to 60 minutes.
