Ingredients

  • 2 tbsp butter
  • 1/4 cup honey
  • 2 eggs
  • 1 tbsp orange juice concentrate
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1/4 cup soy flour
  • 1 cup shredded coconut
  • 1 (15 ounce) can crushed pineapple in juice
  • 3/4 cup chopped nuts

Preparation

Step 1

Cream butter and honey; add eggs, juice and vanilla. Combine flours and add gradually to creamed mixture, blending thoroughly. Using wooden spoon, add coconut, pineapple and nuts. Spread into oiled 13-by-9-by-2-inch baking pan. Bake at 350 F for 45 minutes until nicely browned. Cool before cutting.
