  • 1/4 cup poppy seeds
  • 2 cups whole wheat flour
  • 1/4 cup soy flour
  • 1/4 cup bran
  • 1/4 cup wheat germ
  • 1/4 cup nonfat dry milk
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 cup sesame seeds
  • 1 cup buttermilk
  • 1 cup milk
  • 1/4 cup maple syrup
  • 2 tbsp safflower oil
  • 1 tbsp molasses
  • 1 egg, beaten
  • 4 tbsp rolled oats

Preparation

Step 1

Preheat oven to 350 F. Oil 2 loaf pans, 4-by-8-inches. Sprinkle the bottom and sides of each pan with 2 tbsp of poppy seeds.

In a large bowl, combine the whole wheat flour, soy flour, wheat germ, dry milk, baking soda, baking powder, and sesame seeds.

In a medium-size bowl, combine the buttermilk, milk, syrup, oil, molasses, and egg. Add to the dry ingredients; stir just until moistened.

Pour batter into the loaf pans. Sprinkle each loaf with 2 tablespoons rolled oats.

Bake until tester inserted in center comes out clean, about 50 minutes. Serve warm with Herb Butter (recipe in collection).
