Ingredients
- 1 1/2 lbs. lean ground beef
- 2 Tbsp. olive oil
- 2 onions, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 1/2 tsp. garlic, minced
- 1 14 oz. can diced tomatoes
- Worcestershire sauce to taste
- 1/4 cup yellow mustard
- 3 can kidney beans, rinsed and drained
- 2 tsp. lime juice
- 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. oregano
- 1 tsp. salt
- Freshly ground pepper, to taste
- 2 Tbsp. regular chili powder
- 2 tsp. hot chili powder

Step 1
In a large skillet, heat the olive oil until hot, but not smoking. Brown the ground beef, breaking it up as you go. Just before the beef is finished, add the onions, celery, carrots and garlic and cook until tender. Drain.
Place the beef in the crock pot, add the tomatoes, beans, Worcestershire, mustard, lime juice and spices.
Stir gently and cook for 6-8 hours on low.
