Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 tsp salt
  • 3 tsp baking powder
  • 1 1/2 cups bran
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs
  • 1/4 cup oil
  • 1/4 cup blackstrap molasses
  • 1/3 cup honey
  • 1 1/2 cups milk
  • 2 tbsp vinegar
  • 1 tsp almond extract
  • 1 cup grated zucchini
  • 1 cup chopped nuts

Preparation

Step 1

Combine dry ingredients in large bowl. Set aside. Beat eggs; add oil, molasses, honey, milk, vinegar, almond extract and zucchini. Add zucchini mixture all at once to dry ingredients; add nuts and mix until dry ingredients are just moistened. Fill oiled muffin tins 2/3 full. Bake at 375 F for 20 minutes.
