Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/4 cup soy flour
  • 1/4 cup wheat germ
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 cups apples, coarsely chopped
  • 1 cup chopped nuts
  • 3 tbsp yogurt
  • 2 tsp lemon juice
  • 1 tsp grated rind
  • 1/2 cup honey
  • 2 large eggs
  • 1/2 cup oil

Step 1

Whisk together dry ingredients. Add apples and nuts. Beat together remaining ingredients; add wet mix to dry. Stir just enough to moisten. Bake in 2 greased 5-by-9-inch loaf pans at 350 F for 45 minutes.
