Brussels Sprouts with Mustard

Ingredients
- 2 lbs brussels sprouts
- 4 oz pancetta, cut into 1/4" dice
- salt
- 1/4 cup black mustard seeds
- grated zest and juice of 1 lemon
- 3 tbsp mustard oil

Step 1
Preheat broiler. Trim stems from sprouts and remove any discolored leaves. Cut them lengthwise in half and transfer to a bowl.
Render some of the fat from the pancetta in a saute pan, about 5 minutes.
Pour fat and pancetta over the sprouts and toss. Season with salt and transfer to a baking sheet. Broil several inches from the heat, tossing occasionally for about 15 minutes until they are light brown and tender.
Return the sprouts to a bowl and add seeds, lemon zest and juice, oil, and stir. Check seasoning and serve.
