Cinnamon-Toffee Pecan Cookies
- 1 (18 oz) roll refrigerated sugar cookies
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons vanilla
- 3/4 cup pecans
- 1/2 cup toffee bits
Heat oven to 350 degrees F. Spray cookie sheets with non-stick cooking spray. Break up cookie dough into large bowl. Add cinnamon, nutmeg and vanilla; mix well. Stir in pecans and toffee bits.
Drop dough by heaping teaspoons 3 inches apart onto sprayed cookie sheets.
Bake at 350 degrees F for 11 to 14 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheets.
